Sea risotto

Ingredients:

  • 500 g of arborio rice (special for risotto)
  • 250 g assorted shellfish
  • 1.25 litres of fish stock
  • 3 cloves garlic
  • 1 onion cut into very small pieces
  • 65 g butter
  • 125 ml white wine
  • Grated cheese, olive oil, salt and black pepper of your choice.

Instructions:

  1. Cook the onion and garlic in a pan with olive oil over medium heat until lightly browned.
  2. Next, add the rice and mix well with the onion and garlic. Pour in the white wine and continue cooking until it has evaporated.
  3. Add the seafood and, while stirring, gradually begin to add the fish stock.
  4. Finish cooking over medium-low heat until the rice is just cooked. Finally, add the butter, salt, pepper and cheese.

Glazed Salmon

Glazed salmon is another delicious option for a Valentine's Day menu that will captivate anyone. Here is the recipe:

Ingredients:

  • 500 grams of salmon
  • 1 to 2 tablespoons of mustard.
  • Olive oil
  • 10 tablespoons of honey
  • Grated lime zest
  • Come out to your heart's content!

Instructions:

  1. Mix the mustard, olive oil and honey in a bowl, stirring the ingredients well. At the same time, preheat the oven.
  2. Add salt and lime zest to the salmon pieces, coat them with the previous mixture and bake the pieces in the oven at about 200°C.
  3. Cook rice or salad of your choice to go with it.
  4. After about 15-20 minutes, remove the preparation, baste it again with the remaining mixture, and cook the salmon for an additional 7 minutes.

Grilled tuna with teriyaki sauce

Ingredients:

  • 4 fresh tuna steaks (approximately 150-200 g each)
  • 1 cup teriyaki sauce (you can buy it in grocery shops or make it at home)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: toasted sesame seeds and chopped spring onion

Instructions:

  1. In a small bowl, mix the teriyaki sauce with a tablespoon of olive oil. Reserve some of the mixture to use as a glaze during cooking.
  2. Heat a grill or grill pan over medium-high heat and brush lightly with olive oil to prevent the fish from sticking.
  3. Season the tuna steaks with salt and pepper to your preference on both sides.
  4. Place the fillets on the hot grill and cook for 2-3 minutes on each side. Please note that this time is approximate and will also depend on the thickness of the steaks and the doneness you wish to achieve.
  5. As the tuna cooks, generously brush each side with the reserved teriyaki sauce mixture, turning the fish only once.
  6. When the tuna is cooked to the desired doneness and has caramelised with the teriyaki sauce, remove from the grill and serve.
  7. Optionally, garnish the tuna steaks with toasted sesame seeds and chopped chives before serving.

How to accompany your Valentine's menu?

Choosing the perfect drink to accompany your menu on this occasion is as crucial as choosing the main course itself. For this reason, below is a careful selection of options designed to enhance the flavours of seafood:

  • Sweet wines such as chardonnay.
  • Sparkling wines such as champagne.
  • Sauvignon Blanc: a white wine variety with herbal citrus flavour.
  • Red wines such as Pinot Noir are excellent with salmon.
  • Alcohol-free options such as a sparkling water with grapefruit, lemon or cucumber slices.
