Ingredients
- 400 gr. boiled chickpeas
- 300 gr. raw prawns
- 1 ud. green pepper
- 1 ud. onion
- 1 ud. large tomato
- 1 sheet laurel
- 200 ml. white wine
- 200 ml. of fumet we will have made with the heads of the prawns
- 1 tablespoon tomato concentrate
- 1 teaspoon paprika from la vera
- saffron
- olive oil extra virgin
- salt to taste
Instructions
- Peel the prawns and make the fumet with the heads and skins, add water to cover them and 100ml of white wine. Leave to cook for 15 minutes and set aside.
- Chop all the vegetables and fry them with the olive oil. When they are done, add a little water and blend.
- Add the cooked chickpeas, saffron, salt and paprika, stir and add the remaining white wine. Leave for a couple of minutes for the alcohol to evaporate, then add the prawns and wait 5-10 minutes.
