Cod Croquettes
Ingredients
- 400 gr. cod
- 800 ml. milk
- 100 gr. butter
- 200 gr. flour
- 50 ml. EVOO
- 2 teeth garlic
- 1/2 teaspoon white pepper
- parsley
- salt
Instructions
- Shred the cod and remove any bones it may have.
- Fry it in a frying pan with a little olive oil for a few minutes. Drain well and set aside.
- In a frying pan, melt the butter, add the flour and stir for a few minutes.
- Add the milk little by little while stirring to prevent lumps from forming. Allow the milk to be consumed before adding more.
- Turn up the heat a little, and stirring constantly, when the béchamel sauce starts to boil, add the salt and white pepper.
- Cook for about 15 minutes, stirring constantly to prevent sticking. After 10 minutes, add the cod and mix. Pour the batter into a bowl, cover with cling film and refrigerate for 8 hours to be able to assemble and fry them.
