  • 400 gr. cod
  • 800 ml. milk
  • 100 gr. butter
  • 200 gr. flour
  • 50 ml. EVOO
  • 2 teeth garlic
  • 1/2 teaspoon white pepper
  • parsley
  • salt


  • Shred the cod and remove any bones it may have.
  • Fry it in a frying pan with a little olive oil for a few minutes. Drain well and set aside.
  • In a frying pan, melt the butter, add the flour and stir for a few minutes.
  • Add the milk little by little while stirring to prevent lumps from forming. Allow the milk to be consumed before adding more.
  • Turn up the heat a little, and stirring constantly, when the béchamel sauce starts to boil, add the salt and white pepper.
  • Cook for about 15 minutes, stirring constantly to prevent sticking. After 10 minutes, add the cod and mix. Pour the batter into a bowl, cover with cling film and refrigerate for 8 hours to be able to assemble and fry them.
